Not my area so take this as a question more than an answer, but how are you checking the paths it spits out are actually new and not just the training data reshuffled? A GAN that learned 2010s data can hand you a bunch of scenarios that look varied but never really leave the vol regime it trained on, and then anything downstream that assumes it's a real distribution quietly breaks. Is there a clean way to test for that, like holding out a genuinely different period and seeing if the thing can even reach it?
