Think the title is self explanatory but let me do a couple of helpful clarifications. I am willing to invest all of this in crypto because (i) it represents a relatively small portion of my worth and (ii) most of net worth is invested in S&P and Treasuries, so I want to take on more risk.
I am genuinely not an expert in the crypto world. I don’t know lot of cryptos outside of BTC and ETH. Ideally looking for good return in the near-term horizon, but the point is that I am looking for something risky.
What would you guys recommend?

I don't think it's a taxable event is you send her 1500 euros worth of xrp, and she immediately converts it to euros. Especially if there's no profit. You're literally using it as a money transfer like money gram in the U.S. But you'd need to be worried about whether your sending her money on a regular basis is considered "income" for her, which is then taxable. Just a thought.

In the U.S., until there is a law exempting the first $5000 (or whatever amount) of Bitcoin from capital gains, paying with Bitcoin is too complex.
While it’s great that the U.S. is creating a Bitcoin reserve, until you can do “normal” transactions without worrying about tracking it for capital gains, using Bitcoin as a currency just doesn’t make sense.
People should be writing their congressmen to add this to any Bitcoin bills.

Yeah. I read the article this morning and it seems like CB couldn’t care less about it. States it was an insider, which doesn’t sit well with me. I agree with you about KYC. It should be outlawed. I have every right to spend my own money how i want without regulatory interference. I won’t be using them anymore. I usually buy thru ramp and kraken (the 7 day hold is annoying). Funny how CB just hit the S&P 500 and this happens. Makes you wonder what other shady shit they’ve been doing. The little guy never wins anon.

Larry Fink et all won't let them. Half of the current administration is pro Bitcoin currently. If the previous administration couldn't choke it out of existence a favorable admin certainly won't.
And when if we don't get favorable legislation this go round, who cares? Half the country has investments in BTC or crypto based products now with Coinbase being added into the S&P. The outage would be massive if a future POTUS tried to take action.
We've hit escape velocity. Trump is about to print $5,000,000,000,000 of new money (per new budget bill). BTC will launch, people will love the returns, FOMO will happen and any chance of the USA outlawing it will go away.
