I started researching this myself - unfortunately we don't have a lot of Canadian defense stocks. Most applicable would be MDA Space (MDA.to), Calian Group (CGY.to), and CAE Inc (CAE.to). But none of them are really true defense industry stocks, just the most applicable, because they either offer contracting, training software, etc. We don't have equivalents to companies like Rheinmetall or Northrop Grumman.
Most of Canada's actual military production is privately owned, including our shipbuilders, or foreign-owned. Colt Canada, the manufacturer of our military service rifles, is owned by Czech company Colt CZ Group SE. Logistik Unicorp, which supplies most of our uniforms, is owned by an American private equity firm. Our tanks are of course from Rheinmetall AG from Germany. The TAPVs and LAVs are from the American company Textron.
Even military equipment we don't use, but is Canadian-produced, is primarily from privately owned companies. Roshel Canada, which manufactures the Senator APC, is privately held.
